Abstract
Essential oils have important biological activities. Which leads to the study of the biological activity of these essential oils. The aim of this work is to study the antibacterial, antifungal and antioxidant capacities of extracts of cumin and fennel, and to compare the two compounds. The extraction was carried out by hydrodistillation of the clevenger type, gave a yield (1.11% for cumin and 0.55% for fennel).
