Description

The objective of this work is to study the polysaccharides of Opuntia Ficus Indica. They were characterized physico-chemically by assay of total sugars, water content, ash content, water and fat retention capacity, and emulsifier, and biologically by the study of antimicrobial and antioxidant activity (DPPH, β carotene). The study of the extract yielded the following mean values: total ash (4%), water content (3.008%), total oses (50.3%), 1.02 H2Og-1 for water and 1.05 oil.g-1 for the fat binding capacity. The study of the antibacterial activity shows a very important activity against bacillus with a 23mm halo, the antioxidant activity reached 90% and 71.19% for the trapping of DPPH and β-carotene respectively. The polysaccharides studied by scanning electron spectroscopy demonstrated a porous structure with a maximum absorption of 210 nm. This polymer is rich in carboxylic group and pyranose ring.
